Cacao

Nicaraguan Cacao: Characteristics, Types, and Management

Cacao is a tropical crop grown primarily between 10° north and 10° south of the equator. Its seeds are used mainly to produce chocolate and fats for food and cosmetic products.

Theobroma cacao belongs to the Malvaceae family. The species originated in South America and was domesticated in Mesoamerica.

Traditional Types of Cacao

The traditional classification recognizes three principal groups: Criollo, Forastero, and Trinitario. Modern varieties, hybrids, and clones descend from these groups, although the Criollo–Forastero distinction was historically based on terminology used by Venezuelan growers rather than a strict genetic division.

Trinitario

Trinitario cacao originated in Trinidad and Tobago through hybridization between Criollo and Forastero cacao. The plants are genetically and morphologically diverse, producing green or pigmented pods and seeds ranging from dark violet to pale pink.

Criollo

Criollo cacao originated in northern South America and Central America. It is associated with mild, aromatic flavors and is also cultivated in locations including Venezuela, the Caribbean, Papua New Guinea, Sri Lanka, East Timor, and Java.

Criollo pods are commonly elongated, deeply grooved, and rough-skinned. Their large, rounded seeds typically have white or lightly pigmented cotyledons and relatively low tannin content. Although valued for aroma and flavor, Criollo cacao tends to have lower productivity and greater susceptibility to disease.

Forastero

Forastero cacao originated in the Amazon basin and accounts for much of the world’s cacao production. Its pods are generally short and oval, with a smoother, thicker shell. The seeds tend to be small and flattened, with pigmentation ranging from pale to dark violet.

Cacao Production in Nicaragua

Cacao in Nicaragua grows under temperatures of approximately 22–27°C and annual rainfall of about 1,500–3,500 millimeters. The crop benefits from consistently available moisture, good drainage, aeration, and soils with a deep, dark humic horizon.

Suitable soils range from clay to sandy loam. Clay can retain substantial moisture, while sandy soils may drain too quickly for regions with pronounced dry periods. Daytime relative humidity is ideally maintained above 60%, particularly during the dry season.

Nicaraguan cacao is cultivated in areas including Rivas, Granada, Río San Juan, Matagalpa, Jinotega, and the Caribbean Coast.

Post-Harvest Management

Opening the Pods

Harvested pods should be opened carefully to avoid damaging or contaminating the seeds. Processing them immediately—or no more than two days after harvest—helps reduce losses from disease. Small, cut, flat, or fused seeds should be separated so they do not diminish the quality and appearance of the main batch.

Fermentation

Fermentation is one of the processes that most strongly influences cacao flavor and aroma. The seeds and surrounding pulp are commonly placed in wooden boxes with drainage holes, protected from rain, strong winds, and animals.

Fermentation generally lasts five to six days. Turning the mass on approximately the second, fourth, and fifth days introduces oxygen and promotes more uniform fermentation. During the process, mucilage drains away, temperature rises, the seed embryo dies, and flavor and aroma precursors develop.

The process is spontaneous. Yeasts act first, followed by lactic-acid bacteria, acetic-acid bacteria, and other microorganisms acquired from the pods, tools, containers, and handling surfaces. Washing seeds before fermentation or fermenting them excessively can lead to poor development, acidity, decomposition, and undesirable flavors.

Drying

Drying has four principal objectives:

  1. Reduce the water content of the seeds.
  2. Prevent germination.
  3. Preserve the desired quality of the cacao.
  4. Reach a moisture level that discourages bacterial and fungal growth.

Humidity, temperature, and drying time must be controlled carefully. Excess heat or prolonged exposure can scorch or roast the seeds, while insufficient drying leaves too much moisture for safe storage.

Storage and Selection

After drying, cacao seeds should be sorted by quality and size. Sieves allow smaller seeds to pass through while retaining larger beans for premium grades. Proper storage should maintain low moisture and protect the cacao from contamination, mold, and unwanted odors.
