Coffee Seed Moisture

Moisture in Green Coffee

Green coffee prepared for roasting should generally contain between 10% and 12% moisture. Sufficient drying helps prevent the seed from being scorched externally or heating unevenly during roasting.

Moisture should also be reasonably uniform throughout a roasting batch. When individual seeds have substantially different moisture levels, they absorb heat at different rates and may develop unevenly.

Moisture and Roasting

The temperature of a coffee seed during roasting is influenced principally by its moisture content and density. Early in the roast, energy is used to warm the seed and remove water. Seeds with greater moisture generally require more energy before browning and flavor-development reactions progress.

For consistent results, roasters should evaluate moisture together with seed density, batch size, heat input, airflow, and the intended roast profile.

Natural-Process Drying

In the natural, or unwashed, process, ripe coffee cherries are dried with the fruit surrounding the seeds. Because both the pulp and the seeds must lose water, drying can take several weeks. The cherries should be turned and monitored so that drying proceeds evenly and defects caused by excess moisture are limited.

Practical Considerations

  • Measure green-coffee moisture before roasting.
  • Aim for a uniform moisture level across each batch.
  • Store dried coffee under stable conditions that limit moisture gain or loss.
  • Interpret moisture readings alongside density, seed size, processing method, and storage history.
  • Adjust the roasting profile when coffees differ materially in moisture or density.
