Vienna roasting profile
The Vienna profile is described as bright and oily like an Italian roast while retaining a color closer to Full City. The resulting coffee combines roasted depth with distinctive fruit, almond, chocolate, and raisin notes.
Selective harvesting
Only cherries at peak ripeness are picked individually by hand. Harvesters return to the trees every eight to ten days to select newly ripened fruit. This labor-intensive method is commonly reserved for finer Arabica coffees.
