Criollo Cacao
Cacao types
Theobroma cacao is native to tropical America and was domesticated in Mesoamerica. A traditional classification groups cacao into Criollo, Forastero and Trinitario types. These categories remain common in cacao cultivation and trade, although they do not fully represent the crop’s genetic diversity.
Criollo cacao
Criollo cacao is associated with northern South America and Central America. Its beans are valued for mild, aromatic flavors and are used to produce fine chocolate.
Criollo trees commonly bear elongated pods with pronounced tips, rough surfaces and deep grooves. Pod colors may range from green to red or dark purple. The beans tend to be large and nearly round, with white or lightly pigmented interiors and relatively low tannin levels.
Because Criollo cacao is generally susceptible to disease and produces lower yields than many other types, it represents a limited share of commercial cultivation.
Trinitario cacao
Trinitario cacao originated in Trinidad through hybridization between Criollo and Forastero cacao. Its plants are genetically and morphologically diverse, with pods that may be green or pigmented and seeds ranging from dark violet to pale pink.
Trinitario combines traits from its ancestral groups and is widely cultivated for cacao with desirable flavor and improved agricultural resilience.
Forastero cacao
Forastero cacao originated in the Amazon basin and accounts for much of the cacao grown internationally. Its pods are generally shorter and more oval than Criollo pods, with smoother surfaces and thicker shells. Mature pods commonly change from green to yellow.
The beans are usually small and flattened. Their interiors may range from pale violet to deep purple, depending partly on tannin content.
