Description and characteristics
- Roast: Full City
- Process: Semi-washed, or honey process. The coffee cherries are depulped while some mucilage remains, followed by fermentation and sun drying.
- Type and varieties: 100% Arabica, including Red Catuai and Caturra
- Origin: Apante, Matagalpa, Nicaragua
- Lot: Single batch from one farm lot
- Flavor: Strawberry, almond, and flowers
- Aftertaste: Strawberry, almond, caramel, chocolate, and flowers
The coffee is roasted at origin in Matagalpa. Its fruit and floral character is associated with the non-conventional semi-washed process. Yellow Catuai, and sometimes small amounts of Java, are used for their floral qualities.
Honey-process coffee
Honey-process coffee is semi-washed rather than fully washed. After the fruit skin is removed, sugary mucilage remains around the parchment during drying. Sun exposure concentrates and caramelizes these sugars, influencing the finished coffee’s flavor. The term “honey” describes this sticky mucilage and does not mean that honey is added to the coffee.
