Coffee Viena – Vienna Roast
Café Viena is made from ripe red coffee cherries that are dried whole in the sun. It combines notes of almonds and chocolate and is graded after roasting at screen size 15 and above.

Selection and natural processing
Only ripe cherries are picked individually by hand. Harvesters revisit the trees every eight to ten days to select fruit at peak ripeness.
The cherries are transported intact to sun-drying patios. Drying the whole fruit takes approximately five weeks because the pulp must dehydrate before the coffee seeds inside it can reach the required moisture level.
Green coffee refers to unroasted coffee seeds prepared for roasting. The source describes an appropriate moisture range of approximately 10% to 12%, along with grading according to physical quality.
Grading
The coffee is classified by density, screen size, Arabica variety and growing altitude. For natural-process coffee, density classification is performed at the dry mill after the dried fruit has been removed and the seeds have been sorted by screen size.
Coffee Cherry Tea: Roasted and Spice-Scented
This cascara-style tea is made from the dried skins of ripe red coffee cherries produced through the natural, unwashed process. The coffee cherry material is roasted and blended with cardamom, nutmeg and cloves.
The described flavor profile includes orange peel, hibiscus, peach juice, grapefruit, honey and lemon.
Hot preparation
- Use 10 grams of coffee cherry tea.
- Add 200 milliliters of water at approximately 96°C.
- Cover and steep for six minutes.
- Stir and serve, optionally with ice or honey.
For cold brewing, steep the mixture in the refrigerator for about 24 hours.
