Café Viena Coffee Process

Selection

Selectively picked means that only ripe coffee cherries are harvested, with each cherry picked individually by hand.

Pickers return to the trees every 8–10 days and choose cherries at their peak of ripeness. This labor-intensive and comparatively costly harvesting method is used primarily for finer Arabica coffee beans.
