The Coffee Quality and Distinctive Notes: Density

Density and coffee quality

Coffee quality and distinctive notes depend on several interconnected factors:

  1. Variety: Each coffee variety—such as Java, Bourbon or Maragogype—has its own characteristics.
  2. Bean density: Density is influenced by altitude and the chemical composition of the coffee seed.
  3. Soil composition: Soil and leaf analysis can identify nutritional deficiencies and guide corrective preparation.
  4. Water: Rainfall or irrigation supports the development of the seed, endocarp, fruit and plant.
  5. Light: Light contributes to photosynthesis and maturation and works in combination with variety, water, soil nutrients and altitude.

Altitude and density

The altitude associated with a dense coffee bean varies with latitude and local growing conditions. The article gives the example that an SHB classification associated with approximately 1,200 meters in Costa Rica may correspond to approximately 1,000 meters in Nicaragua.

Altitude should therefore be considered together with variety, latitude, water availability, light and soil nutrition rather than treated as an isolated measure of quality.

Chemical composition

The article links bean density with the chlorogenic-acid content of the coffee seed. It presents the following relationships:

Chlorogenic-acid contentAssociated density
6.0%0.68 g/mL
6.5%0.70 g/mL
7.0%0.72 g/mL

Shade, light and plant adaptation

Shade is described not as a growth factor itself, but as a reduction in available light. Its practical role is to protect coffee plants from excessive heat, dehydration and leaf damage, particularly in exposed low- and middle-elevation areas.

The effect of shade depends on the variety and growing environment. Varieties adapted to high, cloudy conditions may perform differently from Caturra or Catimor plants under the same conditions. Consequently, shade management should reflect the plant variety, elevation, climate and exposure of the site.
